Instructions:

Peel the celery root and cut into slices about 1 cm thick. Cook the celery slices in salted water until firm to the bite.

Mix the egg yolk well with the whipping cream and season with salt, pepper and nutmeg. Turn the vegetables first in the egg yolk mixture and then in the Parmesan.

Heat some oil in a pan and fry the cutlets on both sides until golden brown.

Drain briefly on kitchen paper.

Serve with garlic-sour cream sauce.
