For the celery carrot salad, peel and grate the carrots. Cut the celery into slices about 5 mm wide, also chop the light green leaves and add to the salad bowl.
Make a nice emulsion with the orange pulp, 3 tablespoons of orange juice, anise, salt and pepper and oil with a hand blender. Pour this over the salad and let the salad sit for about 1 hour before serving.
