For the carp sticks in beer batter, separate the eggs and beat the egg whites with the salt until creamy. Mix beer, flour, starch flour, yolks and oil, fold in the beaten egg whites.

Cut carp into 4-5 cm wide sticks, salt and sprinkle with lemon juice. Turn the carp pieces in flour, then pull them through the beer batter and fry them in hot oil until golden brown.

Drain on paper towels and serve the carp sticks in beer batter.
