Apple Pie with Vanilla Pudding

Dough:

Mix just under half the butter with a third of the sugar and half the eggs. Knead together with half the flour and rest for 1-2 hours.

Crumble:

Knead remaining fat with remaining sugar, egg and flour to make crumbles, set aside to cool.

Roll out dough. Place on a greased baking tray and prick a few times. Pre-bake at 200 degrees for 6-7 min.

Make vanilla pudding and spread on the dough.

Peel apples, cut into eighths, core and slice lengthwise. Place on top of the pudding, sprinkle with crumble. Bake in a 200 °C oven (gas 3, convection oven 180) on the 2nd rack from the bottom for 25 minutes. Dust with powdered sugar.
