A great pasta dish for any occasion:
Bring milk, salt and nutmeg to a boil. Add the semolina in the thread and stir with a wooden ladle until the mixture thickens. Remove from heat. Mix the egg, half of the Parmesan cheese and pepper into the semolina. Rinse a cooled baking tray, pour the still warm porridge on it, smooth it and cool it down.
Then, using a glass or cookie cutter, cut out cookies and layer them like roof tiles in a buttered baking dish. Sprinkle with the remaining cheese and drizzle with melted butter.
Meanwhile, bake in the oven heated to 220 °C for 15 to 20 minutes until golden brown.
Serving example: with a green leaf salad as a light dinner.
