For the zucchini curry soup, cut the zucchini into small pieces. Sauté the garlic in oil and add the zucchini and let it sauté a little. Then sprinkle the curry powder on top and let it brown a little. Deglaze with the whipped cream and vegetable soup and simmer for about 10 minutes. When the zucchini pieces are soft, puree the soup with a hand blender. If you like, you can add some sour cream or crème fraiche. Season the zucchini curry soup with salt – done.
