Pound the cutlets thinly so that the filling can be placed on top. Wrap a slice of cheese and a slice of tomato in each of the ham slices and place them on the cutlets so that neither tomato juice nor cheese can leak out during the cooking process. Season with salt and pepper.

Bread the cutlets, fry them in butter and oil on a low fire until they are nicely colored. Serve hot.
