For the Thai Chicken Curry, dice the chicken. Cut garlic, onion, carrot and bell bell pepper into small pieces, heat oil and fry meat.
Add the vegetables and fry them as well. Mix in the coconut milk and simmer gently for about 5 minutes. Mix in soy sauce, fish sauce, chili powder, salt and chopped cilantro.
Serve the Thai Chicken Curry with rice or bread as desired.
