Instructions:

Cut meat into narrow strips. Heat clarified butter, brown meat in portions, season, remove and keep warm.

Dice the onions and sauté in the dripping until translucent. Blanch (scald) peaches, peel, cut into wedges, add to onions with whipped cream and peach liqueur and heat.

Meat in the sauce form, season strongly with salt and freshly ground pepper.

Accompanying dish: Long grain rice.
