Instructions:

Peel fine zest from the lemon with a zest wringer, then wring out the juice from the lemon. Remove the peel from the ginger and chop coarsely.

Add juice of one lemon, white wine, zest, ginger, cilantro stems, sea salt and pepper to a saucepan and bring to a boil. Put the salmon fillets in, pull the frying pan off the stove and let the salmon soak in the hot liquid for 7 minutes. Remove and bring to the table drizzled with a little olive oil and perhaps lemon.

Serve with spinach leaves or a lukewarm vegetable salad.
