In this soup recipe, the intrinsic flavor of the men’s mushrooms comes out quite magnificently.

Sauté onions with butter in a large saucepan until light brown. Sauté mushrooms with garlic and wine, then add clear soup, potatoes and thyme. Simmer on low heat for 45 min,

Puree the soup lightly in a food processor so that the mushrooms remain whole.

For the croutons, cut the bread into 2.5 cm long strips. Melt the butter in a large frying pan, toss the bread pieces in it and roast until golden brown. Mix with the parsley. Season the soup with the juice of one lemon, salt and freshly ground pepper and pour it into warmed plates, sprinkle the parsley croutons on top and bring to the table.
