Instructions:

Bring peppermint leaves, apple juice and a quarter of a liter of water to a boil. Cover and simmer on low heat for about 30 minutes. Leave to infuse for one night. Coarsely grate peeled apples, add to strained peppermint broth form. Add ginger and citric acid. Fold in preserving sugar. Bring to a boil and bubble for 3 min. Pour into jars, seal and set aside upside down for 5 min.
