For the salmon in coconut-basil sauce, heat the oil.

Put flour in a bowl and turn fish cubes in it. Stir-fry the fish cubes in the oil for 3-4 minutes.

Mix garlic, curry paste, fish sauce and coconut milk. Pour over fish and bring to a boil. Add tomatoes and simmer for 5 minutes.

Cut basil into strips and add to fish.

Serve the salmon in coconut basil sauce with basmati rice.
