For the orange fudge, first wash, dry and grate the orange. Then cut in half and squeeze out the juice. In a large saucepan, melt the butter – it should not brown. Pour in the granulated sugar and stir until the sugar melts and becomes very light brown.

Then pour in the orange juice, whipped cream and honey, add the orange zest and stir until everything is uniform again. Lumps will form as you pour, so stir and continue to simmer until they dissolve.

Pour the finished mixture into a prepared oiled container (or silicone), let it set and cut the orange fudge into cubes.
