Sauté the flour in butter, pour in the clear soup, add the finely chopped greens and let everything bubble together. Simmer gently until the vegetables are cooked.

Season to taste with salt and a pinch of nutmeg, mix the egg yolks with the white wine and whipped cream, stir into the hot soup taken off the heat.

Cut the chicken into small pieces and add to the soup.
