* buy frozen (with shell and head) no pretreated stuff.

Scampi frozen in cold water and wait in about 15 min. Then unwrap (head off, shell off …). Be careful, do not give away meat. Small cut over the back and gut out! Then wash under running water and season a little bit with salt, just a little bit!

Rinse and finely chop parsley, mince garlic and mix with parsley (best in mortar) and steep for about 10 min.

Fry pan on and 1/2 cup olive oil in to fry. Sauté the parsley and garlic mixture on top and on the spot put the chilies in and the crab tails on top. Roast the crab tails until tender pinkish white (don’t taste too often). When crab tails are good, pour remaining oil on top and warm.

Best brought to the table in small clay pots. Please warn guests: these little red things (chili) are not for eating!

P.S. The crayfish tails are good when they are absolutely hot. Please have drinks ready

For 4 people with additional dishes simply top, forget everything together others!
