For the coconut cubes, separate the eggs and beat the egg whites with a pinch of salt until stiff. Beat the yolks and sugar until foamy and then fold in the snow and flour alternately.

Pour the mixture into a greased and floured pan (about 30 x 20) and bake at 180 degrees for about 20 minutes. After the sponge has cooled, cut out horizontally.

Spread one part with jam, then put the second part back on top and cut into small pieces.

For the chocolate glaze, heat the chocolate and margarine in a water bath, then stir in the milk and rum. Dip each piece in the chocolate with a fork and then roll in coconut.
