For the butter cookies, put powdered sugar, flour and vanilla sugar in a bowl. Add egg yolks as well as grated lemon zest. Cut the cold butter directly into small pieces and quickly work everything into a smooth dough with the dough hook of a food processor or on the work surface by hand.

If the butter was really cold, immediately roll out dough and cut into any shapes. (If the dough is too warm, shape into a flat loaf, wrap in plastic wrap and let rest in the refrigerator for 2 hours, then roll out).

Preheat oven to 170°C-180°C. Line a baking tray with baking paper and place the butter cookies on it. Brush with whisked egg yolk and sprinkle as desired or bake undusted for about 10 minutes until golden brown.
