Cut white bread into coarse cubes and grind finely in a hand mixer. Mix eggs. Rinse meat, rub dry. Season with salt and pepper. Turn first in flour, then in the eggs and finally in the bread crumbs on the other side.
Lightly press breadcrumbs until smooth.
Heat 3-4 tbsp. oil in a frying pan. Fry chops in batches over medium heat for 2-3 min on each side. Place on an oiled baking tray. Bake in heated kitchen oven (electric oven: 150 °C / convection oven: 125 °C / gas: see manufacturer) for 8-10 min.
Heat 1 tbsp oil in the frying fat. Fry garlic, shallots, peppers and tomatoes for about 4 minutes, turning. Fry rosemary briefly. Season with salt, pepper and juice of one lemon. Fold in basil. Arrange everything.
Bread and play Do not take fresh bread for a breading, because it is too sticky, but rather the one from the day before. If a classic bread breading is too simple for you, you can add more ingredients to it. Mix bread with arugula, for example, and the breading becomes green and spicy. Mixing in toasted white and black sesame seeds gives a nutty crust.
