Chop the apricots finely. Remove the peel from the ginger and chop very finely. Cut the peppers in half, remove the core and chop the flesh.

Add orange juice, ginger, peppers, apricots, mustard, sugar and vinegar to a saucepan and cook until creamy. Season with coarsely ground pepper.
