For the wholemeal apricot cake, beat the yolks, powdered sugar, vanilla sugar and soft butter until fluffy. Beat the egg whites until stiff and set aside.

Now stir flour and baking powder into the yolk mixture and then fold in the snow. Spread the dough on a baking tray lined with baking paper and spread the halved and pitted apricots on top.

Finally, sprinkle some cinnamon over the cake and bake in the oven at 175 °C for about 25 minutes. Afterwards, the wholemeal apricot cake can be eaten right away!
