For the TUC cookies, preheat the oven to 200 degrees. In a bowl, mix flour, baking powder, sugar and salt. Work in the butter with your hands until you have a crumbly mixture.

Add the oil and continue to knead with your hands. Then add about 30 ml of water and knead. Check the consistency. Dump the dough, still a little wet, onto the work surface and add enough water to make a smooth, shiny but not too sticky dough. (about 50 ml of water was needed here).

Divide the dough in half and roll out on a clean work surface to a thickness of about 2 mm. Using a wheel (for example a pizza dough wheel), roll out small rectangles and prick them with a fork.

Place in the oven for approx. 10 – 15 minutes on the middle rack. Depending on the size, 20 – 50 pieces will come out.

When the crackers are golden brown, remove from the oven and brush with melted butter and salt. After the hot crackers have absorbed the butter, brush again.
