Season the cutlets with salt. Cut the cheese slices in half, wrap 2 halves with ham and place on the cutlets. Fold the cutlets together and pin them with small sticks for better hold. Season with salt and pepper. Turn the prepared cutlets one by one in flour, beaten egg and breadcrumbs on the other side. Fry in clarified butter over medium heat until golden brown. (hjp)
