Boil potatoes with skin in salted water for 15 minutes. Preheat oven to 180 degrees.
Cut potatoes in half horizontally, peel out some of the inside, mix half of it with grated cheese and herbs and fill it back into the potato halves. Assemble potato halves, wrap each with 2 bacon slices and pin with toothpicks. Place on a baking tray lined with baking paper and bake in the oven for about 20 minutes.
Mix crème fraîche with mayonnaise. Drain tomatoes, dice finely and mix in. Season with salt and pepper. Cut potatoes in half and arrange 3 halves on each plate.
