Instructions:

Wash the potatoes, salt them and steam them in their skins. Peel while still hot and then press through the potato ricer.

Heat the milk and briefly whisk the mashed potatoes with the milk, adding crème fraîche and butter.

Season to taste with nutmeg and salt.
