Spread brown bread thickly with goose fat (‘ordendlich watt droff’).
Cut the Harz cheese into thick slices and cover the bread with them.
Sprinkle with a little caraway. Peel onion and chop into rings. Spread over the cheese.
Serve with a properly chilled beer and preferably another “Klarer”.

The Harzer cheese, briefly only “Harzer” called, is probably the most well-known speciality from the resin.
Thus the today’s “genuine” Harzer cheese developed. He belongs to the lean cheeses and may be eaten even in a slimming diet. Of course, afterwards without goose fat or butter!
