For the coconut biscuits, beat egg whites with sugar, lemon juice and honey until very foamy. Mix in the coconut flakes. Fill the mixture into a piping bag with a smooth nozzle and pipe small heaps onto a prepared baking tray. Let rest for 1 hour before baking. Bake in preheated oven at 165 to 175 °C for 10 to 12 minutes until light brown.
