For the apricot sheet cake, preheat the oven to 160 °C hot air. Line a baking tray with baking paper. Wash, core and dice the apricots.

Separate the eggs and beat the egg whites until stiff and chill. Beat the yolks with the sugar and vanilla sugar until foamy. Gradually add the oil and then stir in the milk a little at a time.

Mix flour with baking powder and sift into the mixture and fold in. Finally, fold in the beaten egg whites and pour the batter onto the baking sheet and smooth it out.

Put the apricot cubes on the dough and bake for about 30-40 minutes.
