1. generously remove the peel from the grapefruits and oranges so that the white skin is removed and remove (fillet) the fruit fillets between the separating membranes using a sharp kitchen knife.
2. squeeze the juice out of the membranes.
3. melt confectioners’ sugar in a frying pan at medium temperature (do not brown… Mix in butter, reduce temperature.
Stir orange-grapefruit juice into sugar-butter mixture. Toss fruit fillets in it. Season to taste with orange liqueur.
Arrange fillets and mint leaves on large plates. Garnish with Amarena cherries.
