Asparagus Sauce

For an asparagus sauce, mix well yolks, a little vinegar, mustard and a pinch of sugar, stir in oil drop by drop. Season with salt and pepper.

Blanch asparagus tips in salted water and cut into fine rings. Mix well mayonnaise with asparagus tips and sour cream.
