Instructions:

Skirlie is served as an accompaniment to roast poultry, beef, veal and pork or possibly to a minced meat sauce as in our recipe.

Peel the onions, chop them finely and sweat them in the butter at low temperature until translucent. Now switch the kitchen stove to the highest temperature and roast the minced beef heartily in the frying pan. Add the beef broth, season lightly with salt and pepper and simmer for 30 minutes at low temperature in the open saucepan. Season to taste.

Remove the skin from the onion and chop coarsely. Melt the butter in a large heavy frying pan and brown the onion in it.

Add the oatmeal, stirring to absorb the butter completely. Season with salt and pepper and bring to the table on the spot with the beef sauce.

Tip:

– Always season stews like this sauce lightly with salt at the beginning and season with pepper. During braising, liquid evaporates so that the salt concentration increases.
