For the red cabbage spread, defrost the frozen red cabbage.

Sauté shallots in butter and pour in port wine. Add red cabbage and steam covered on low heat for about 10 minutes. Put red cabbage into a bowl and squeeze out the liquid very well.

Wrap curd in a clean dish towel and drain, squeeze well. Mix curd with mayonnaise and almonds, stir in red cabbage and parsley and season the red cabbage spread.
