For the puff pastry croissants, cut the feta cheese into small cubes and the anchovy fillets into small pieces.mix the feta cheese, oregano, anchovies, capers and egg white. Preheat the oven to 180 degrees. Roll up the puff pastry, portion into small squares and apply a small amount of filling in the center of each square.Then roll up the croissants. Simply roll the top left corner down to the right and bend into a croissant shape. Twist the ends together again to prevent the filling from squeezing out.

Place the Mediterranean puff pastry croissants on a baking tray lined with baking paper, brush with the beaten egg yolk and bake for about 20 minutes.
