Cauliflower with bechamel sauce is a classic and tastes good. But as the saying goes? The eye eats with you! So why not prepare the seasonal vegetables rich in vitamin C in a Polish way?

For the Polish-style cauliflower, clean the cauliflower and cook in salted water for 15-20 minutes. Meanwhile, hard boil two eggs, season and peel. Chop the egg white and pass the yolk through a fine sieve. Grate the zest of an untreated lemon and squeeze the juice. Finely chop the parsley.

Heat some butter and toast breadcrumbs in it until golden. Add lemon (juice and zest), parsley and egg white and mix. Season with salt and pepper. Pour the mixture over the prepared cauliflower Polish style and sprinkle with the egg yolk.
