Soak the morels in cold water for 2 hours. Drain, collect the water and strain through a coffee filter. Cut the morels in half, if necessary, or into quarters and sauté in butter with the shallots. Extinguish with sherry. Boil vigorously, then add cream. Continue cooking until the morels are cooked and the sauce becomes creamy.

Season strongly with salt and freshly ground pepper.

Depending on the use, you can add the meat stock.
