In a porcelain mortar, grind the peeled garlic cloves with a little bit of salt, cumin, a piece of the pepper and the chopped coriander greens to a paste. Then add the oil and the vinegar.

In mojo colorado, the red version, the coriander greens are replaced with bell bell pepper and the amount of hot red pepper is increased. Mojo verde is served with fried or grilled fish, mojo colorado with potatoes cooked with the skin in strongly salted tap water or seawater.

Tip: Use better olives – it pays off!
