Instructions:

Remove the rind from the three types of soft cheese, cut into small pieces and slowly melt in cream. Season with salt, pepper and nutmeg and refine with a little soup. Whip with a hand blender until very frothy. Remove the rind from the mountain cheese, cut it into triangles and coat them in flour, beaten egg and breadcrumbs. Fry in hot oil until crispy. Finely chop the truffles and sauté them in a little butter. Now arrange the cheese melange in coffee cups. Sprinkle generously with the black truffles and put some whipped milk foam on top. Finish with the baked mountain cheese.
