Shape ground beef into four loaves with wet hands, press indentation into it with raw egg and pour in neatly separated egg yolk. Arrange on wooden boards, put chopped onion, a dessert bowl of salt and the pepper mill. Serve sliced cucumber, bread and butter separately. Serve with ice-cold gentian.
