For the apricot syrup, carefully wash the apricots, remove the stalks, halve and remove the seeds, then blend with a hand blender.

Cut the lemon open and squeeze it, add sugar, vanilla and juice of the lemon.

Pour this thick fruit syrup into a screw-top jar and use for juices, ice cream or shakes as needed.
