For the apple-onion lard spread, sauté onion and bacon in 3 tablespoons of oil. Add apple, chili and 2 tablespoons herbs and fry briefly.
Let lard become liquid over a water bath and add the onion mixture. Season with salt, pepper and the remaining herbs.
Mix well together. Stir in the remaining olive oil and pour into a suitable container (jar) while lukewarm.
Allow the apple and onion lard spread to set in the refrigerator.
