For the tomato crostini with quail fried egg, first slowly sauté the bacon and onion cubes in a little olive oil. Add the tomato sauce or fresh tomato cubes, season well with salt, pepper and oregano and let everything boil down until the sauce is nice and thick.

In the meantime, cut the mozzarella into small cubes. Drizzle bread with a little (!) olive oil, season as well, spread mozzarella on top and toast in a very well preheated oven (best under the grill coil) until the cheese is melted.Meanwhile, heat some butter in a pan, crack in the quail eggs and fry for a few minutes to waxy fried eggs. Add salt and pepper.

Spread crispy tomato crostini with tomato sauce and place a quail fried egg on top of each.

Arrange tomato crostini with quail fried egg and garnish with chopped herbs as desired.
