Strain the shrimp and drain well. Cut the sausage into slices and the ham into cubes.

In a baking bowl, mix 1 tsp. salt with ½ tsp. each of pepper, thyme and cayenne pepper and turn the chicken breast cubes in it to the other side.

Heat 2 Â 3 tbsp vegetable oil in the casserole and brown the chicken cubes in it for about 8 min.

Then add celery, onion and garlic and cook for 5 minutes. Then add sausage, ham, tomatoes, peppers, tomato sauce and clear soup, boil, reduce temperature and continue to boil gently for 15 minutes. Then add shrimps, simmer for 3 minutes, add spicy seasoning, fold in long grain rice and shallot and serve.

Serve with: green leaf salad, maybe a little fresh baguette Drink : a well chilled white wine

Tip: It is best to use your favorite ham – then your dish will taste twice as good!
