For the wholemeal couscous salad, pour the boiling water over the couscous in a bowl and leave to swell for at least 10 minutes. In the meantime, finely chop the onion and garlic, quarter the leek and cut into thin slices.

Cut the tomatoes and bell bell pepper into small pieces. Add everything to the couscous, season with oil, vinegar and spices and mix in the handful of cashew nuts.
