For the parsley potatoes, steam the potatoes, then peel and quarter them. Wash the parsley, pluck from the stems and chop.

Heat clarified butter in a frying pan, add potatoes and salt, roast over medium heat, turning repeatedly.

Add parsley, mix well and remove parsley potatoes from heat.
