Instructions:

For the pumpkin seed oil parfait with strawberry ragout, first puree 100 g strawberries with sugar (if you use frozen strawberries, let them defrost first). Dice the remaining strawberries and stir them into the strawberry sauce. The ragout can be finished with mint or basil (cut into fine strips).

Beat the egg and yolk with the sugar over steam until creamy and firmer. Carefully stir in the pumpkin seed oil and pumpkin seed brittle. Finally, fold in the whipped cream. Pour into molds (for example, silicone muffin molds or coffee cups) and allow to infuse for several hours or overnight in the freezer.

To serve, briefly dip the molds with the pumpkin seed oil parfait in hot water (the parfait is then easier to turn out) and arrange on plates with the strawberry ragout.
