For the cherry soup, pit the cherries and collect the juice. Mix with the water, a little sugar and the spices and let it boil. Add the juice or wine and season with sugar and the juice of one lemon. Finally, add the cornflour mixed with water to thicken.

Serve the cherry soup lukewarm and with a little whipped cream or egg white meringue for garnish.
