For the potato stew with smoked elk sausage, first wash peppers, remove seeds and cut into cubes. In a pot, fry olive oil with onions. Fry diced peppers, tomato paste and diced potatoes. Add spices, salt and pour beef stock. Simmer for 20 minutes.

Add elk sausage and simmer for another 5 minutes. Serve the potato stew with smoked elk sausage with crème fraîche and basil.
